Peachy Treat

 

When Hippocrates said, “Let food be thy medicine and medicine be thy food”, we think that he most definitely must have been talking about peaches.  Why not feast your eyes on this delicious fruit? Peaches are high in vitamins and minerals that are nourishing for the eyes, skin, and even the kidneys. They are a rich source of antioxidants and fiber.  Combine it with invigorating herbs like cinnamon and ginger, and you have yourself the perfect treat. Here is a yummy recipe for an end of summer smoothie that includes those herbs and other foods that Hippocrates most likely would have encouraged eating.

 

Ingredients:

  • 4 large peaches
  •  1 can coconut milk
  •  1 tablespoon minced ginger
  •  1 pinch of cinnamon
  •  Sprig of mint or parsley

Instructions:

  1. Put the peaches, coconut milk and ginger in a blender and mix well.  
  2. If you want it chilled, add a few ice cubes.  

Serve the peach smoothie with a pinch of cinnamon on top and a sprig of mint or parsley.  Enjoy!
